Grinch Pudding Cookies

My kids LOVE making these cookies each year for Christmas! They are super easy to make and my kids love rolling the cookies in powdered sugar and adding the Grinch heart sprinkles. These cookies are super soft and full of pistachio flavor. A yummy and festive Christmas treat!

Grinch Pudding Cookies

By Valerie Kukahiko Serves: About 34, 3/4 oz cookies

Ingredients

  • 3/4 cup butter, softened (not melted)
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 boxes (3.4 oz each) instant pistachio pudding mix
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups flour
  • powdered sugar
  • large red heart sprinkles

Instructions

1. Cream butter and sugar together for 1 minute.

2. Add eggs and vanilla. Mix until combined.

3. Add pudding mixes, soda, salt, and flour. Mix until just combined.

4. Refrigerate cookie dough for at least 30 minutes.

5. Preheat oven to 350 degrees.

6. Using a heaping Tablespoon cookie scoop, scoop out cookies.

7. Roll each cookie in powdered sugar until completely covered. Place on cookie sheet.

8. Lightly press a heart sprinkle into the middle of each cookie.

9. Bake 10-12 minutes. Cookies should be soft when you remove them from the oven.

10. Cool to let them finish setting up.
