Breakfast Puff Pastry Tarts

I love anything puff pastry and this is one of my favorite ways to use it for breakfast. These savory tarts are quick and easy to make and so delicious.

The recipe below is a basic outline for how to make these tarts. I don’t give exact measurements for all of the ingredients because this recipe is totally customizable to what you like. Try it as listed below or test out other ingredients like cooked crumbled sausage, sauteed onions, diced tomatoes, etc. There’s so many possibilities!

Breakfast Puff Pastry Tarts

Cooking Time: 20-24 minutes

Ingredients

  • 1 sheet puff pastry
  • 9 eggs
  • salt and pepper
  • shredded cheese- like cheddar, cheddar jack, pepper jack, etc.
  • 3 slices mostly cooked bacon or precooked bacon
  • fresh chives, finely chopped

Instructions

Place the oven rack in the middle of the oven. Preheat the oven to 400 degrees.

Thaw puff pastry sheet according to package directions. Roll puff pastry out into a 13x13 inch square. Carefully lift it and place it on a baking sheet.

Fold one edge over ½ inch and then fold it over again another ½ inch to create a tight border. Repeat with the other edges to create a border around the entire square.

Crack eggs over the puff pastry, evenly spreading them out within the border.

Dip a pastry brush in the egg whites of the eggs on the puff pastry and brush the edges of the border. Make sure the corners are securely pinned down.

Sprinkle the top of the eggs well with salt and pepper.

Sprinkle the shredded cheese over the eggs.

Dice the bacon into ½ inch pieces. Sprinkle it over the cheese.

Sprinkle the chopped chives over the top.

Bake for 20-24 minutes or until puff pastry is golden on the edges and puffed up.

Cut into squares and serve warm.
