I love making this recipe because it’s easy, I know that my entire family will eat it, and there won’t be any leftovers! Serve it with mashed potatoes and roasted green beans for the perfect comfort meal.
Meatloaf
Ingredients
- 2 lb lean ground beef
- 2 Tablespoons butter
- 1 medium onion, finely diced
- 3 cloves garlic, minced
- 2 eggs
- 1 Tablespoon dried parsley
- 1 Tablespoon worcestershire sauce
- 3 Tablespoons ketchup
- ½ teaspoon pepper
- 1 teaspoon salt
- 1 teaspoon italian seasoning
- 1 cup panko crumbs
- ½ cup milk
- 1 teaspoon better than bouillon beef base
- SAUCE
- 1 cup ketchup
- 3 Tablespoons brown sugar
- 1 teaspoon vinegar
- ½ teaspoon garlic salt
- ½ teaspoon onion salt
Instructions
Preheat oven to 375 degrees. Line a baking sheet with foil and spray it with cooking spray. Set it aside.
Add ground beef to a large mixing bowl. Set it aside.
Cook butter and onions together in a medium frying pan over medium heat until onions are softened.
Add minced garlic and cook for 1 minute while stirring frequently. Pour cooked onions and garlic into the bowl with the ground beef.
Add eggs, parsley, worcestershire, ketchup, pepper, salt, Italian seasoning, and panko crumbs to the bowl.
Pour milk into a 1 cup glass measuring cup. Add beef bouillon base and whisk together. Pour mixture into the bowl with the beef.
Mix the meat and other ingredients in the bowl together until just combined.
Form meat into an 8x4 inch loaf on the prepared baking sheet.
Make the sauce by combining the ketchup, brown sugar, vinegar, garlic salt, and onion salt in a small bowl. Whisk together.
Spread half of the sauce on top of the meatloaf.
Bake meatloaf for 50-60 minutes or until it’s cooked through to an internal temperature of 160 degrees.
Let the meatloaf rest for 10 minutes before serving. Use the leftover sauce as extra dipping sauce.
